A Southern Delight

    There is nothing better than warm, chunky, chocolate chip cookies, with a tall glass of cold milk. I'm not talking about the packaged cookies you go to Kroger or Wal-mart to purchase. Oh no, these are special cookies; they are made with lots of LOVE. Let me just say this, they do not disappoint! 



                  Ingredients
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/3 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 - 2 cups semisweet choc. chips or M&M's            
  • 1/2 cup of slivered almonds (optional)

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
  2. Sift together the flour, baking soda and salt; set aside. (This is important, do not skip)
  3. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. (I like to use an ice cream scoop when dropping my cookie dough, so that my cookies are similar in size. 2 scoops per cookie. Cookies should be about 3 inches apart.)
  4. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. (I know that the time varies depending on the type of cookie sheet you use, so you may need to add a few minutes if the cookies aren't a golden color on the edges) Do not over cook them.
  5. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.


This recipe is very basic, but it does the job. I like to make BIG cookies (2 small ice cream scoops full / per cookie), so normally I get about a dozen or so. 



Oh yeah, now that's how you make Southern homemade cookies! Not only do they taste great, but the aroma is intoxicating. Mmm, mmm, mmm...what a Southern Delight.
